Spring Chicken Spaghetti Squash

Now that Spring is officially here, it's time to gradually move away from heavy winter foods to lighter, healthier Spring foods. Say hello to Spaghetti Squash, one of the easiest vegetables to make.
Whole yellow spaghetti squash
Place spaghetti squash on pan, poke holes all around the squash. Bake 375F for 1 hour.
purple onion, green bell pepper, red bell pepper, whole garlic on a cutting board
diced purple onion, red bell pepper, green bell pepper and 4 garlic cloves
Dice one red and green bell pepper, half purple onion, 3 garlic cloves.
sauteed vegetables and a half stick of butter
Saute vegetables and add a half a stick of butter.

After the spaghetti squash has cooled, cut in half and scoop out seeds. One squash feeds plenty
Scoop squash into pan of peppers and onions, mix well.

Brown and cook chicken tenders or meats of your choice.

Top with chicken and parmesan. Enjoy!
