Let's roast some harvest vegetables
I was never a fan of beets until I had them roasted. As we move into autumn we naturally begin craving heartier meals like stews, chili and baked foods; foods that will fill us up and keep us warm. These seasonal vegetables are awesome add to your Autumn and Winter meals.
Yams, sweet potatoes, beets, purple onions, white onions and squash.
Coat with olive oil, season with salt and pepper.

Bake in 450 degree oven for 1 hr or until veggies are tender.
Add roasted veggies to salad, have as a side dish or eat by themselves.
